
My second attempt at cookies. It turned out super yummy and healthy too. I got the recipe from a book i picked up from the bookstore, hope you like it...
Quick Oatmeal Raisin Cookies makes about 75 cookies
What you need: 200g Plain Flour
1 tspn Baking Soda
1 tspn Ground Cinnamon
180g Butter at room temperature
200g Granulated Sugar
1 tspn Vanilla essence
2 small eggs
4 tbspn milk
1/4 tsp Salt
100g Oats
150g Raisins (the more the yummier)
60g Walnuts, chopped
Making it work:
- Line baking trays with non-stick backing paper, heat over at 180c
- Sift together flour, baking powder and ground cinnamon
- Cream butter and sugar with vanilla essence for 1 minute, scrape down the sides of the bowl and whisk at high speed for 3 minutes.
- Decrease speed, and beat in one egg at a time.
- Beat in milk and fold in dry ingredients.
- Use 2 teaspoons, shape batter into balls and place them on the prepared trays at least 10 cm apart.
- Baking in oven for 12-15 minutes until lightly brown.
Note:
- these are soft cookies so when they will be kinda soft and crumbly when you first take them out of the oven. Just let them cool down and then enjoy with milk.
- If you prefer firm biscuits,flip them over and pop them back into the oven for another two minutes.
